Sarah’s Simple Suppers: Mediterranean Tuna Tostadas

I’ve been on a health kick lately (ok for the last three days), so I made fresh, fantastic Mediterranean tuna tostadas!  These are so easy to put together, and they’re good for you.  Ok, maybe not the aioli, but MOST of it is good for you.  Here’s the recipe:

INGREDIENTS:

tuna, 4 oz

tomato (you can use canned), 1

diced red onion, 1/4 cups

crumbled feta cheese, 1/2 cup

black olives, pitted and sliced, 1/2 cup

capers, 1 tbsp.

chopped parsley, 3 tablespoons

chopped fresh dill, 1 tbsp.

lemon juice, 3 tbsp.

olive oil, 2 tsp

black pepper, to taste

 

DILL GARLIC AOILI:

mayonnaise, 1/3 cup

chopped fresh dill, 1 tbsp.

lemon juice, 1 tbsp.

garlic, minced

salt, to taste

baked corn tostadas, 8

DIRECTIONS:

Mix all Mediterranean tuna ingredients together in large bowl.

AOILI DIRECTIONS:

Whisk together all ingredients until smooth.

Spoon the tuna onto the tostadas and add aioli on top.

Enjoy!
